A new neighbourhood bakery that promises “joy, connection and nourishment” is set to open in Islington this summer.
Quince Bakery in New North Road is due to open its doors to customers by the end of June this year.
Head baker Anna Higham and general manager Paris Barghchi say they aim to create a “joyful, delicious and community-centred” bakery.
They promise country loaves, rustic baguettes, yeast buns and oat cookies, as well as tarts and gluten-free cakes that can bought by the slice.
Anna, who has previously devised dessert menus for London-based restaurants Lyles, Flor and The River Café, and baked at Oxford’s Hamblin Bread, said she had long held the ambition to open a bakery of her own.
Anna and Paris said: “We can’t wait to have a space to put all of our ideas and expertise into action – to make bread every day that we know will be some of the best in the city, to bake a menu that will be inspired by the ingredients that we love, to create a model for a small business that is built on relationships and community.
“Quince will be a bakery with a commitment to joy, connection and to nourishment.”
The pair have launched a Crowdfunding campaign to raise funds to fit out the premises in New North Road.
They said that the target of £40,000 would go towards installing fridges, a new floor and bread shelves, as well as buying bakery equipment, paint and tiles.
As of March 24, Anna and Paris had raised more than £21,000 for the bakery.
